Our Team Shares Their Thanksgiving Traditions

The beauty of Thanksgiving is that everyone celebrates it a bit differently! Here at exaqueo, we understand that just like each of our client’s employees, every one of our employees is unique. Each one of us has different experiences, comes from a different background, and therefore will each have unique Thanksgiving traditions. We asked each of our team members to share a bit about why they love this holiday and how they celebrate it. Here are just some of team exaqueo’s favorite Thanksgiving traditions.

Susan’s Sweet Potato Casserole: 

Fun fact: Susan won The Ritz-Carlton Thanksgiving Potluck recipe contest with this recipe!

3 c. peeled, boiled sweet potatoes (5-6)

2 eggs, beaten

1 c. sugar

1/2 tsp. salt

1-1/2 stick of margarine or butter

1 tbsp. vanilla

1/2 c. milk

1 c. brown sugar

1 c. chopped nuts

1/2 c. flour

Directions:

  • Boil potatoes until they crumble with a fork. Drain.
  • Cream sugar, 1/2 stick of softened margarine or butter and eggs.
  • Add salt, potatoes, milk and vanilla. Beat until mixed and pour into baking dish.
  • Dice the remaining stick of butter or margarine and mix lightly with the flour so butter stays in small cubes. Add the brown sugar and nuts. Sprinkle the entire mixture on top of sweet potatoes.
  • Bake at 325 degrees for 30 minutes.
